Paneer Pizza Roll Snack Recipes Sanjeev Kapoor Khazana

Now your favourite Paneer Pizza just got a new look, as a roll. The yummy paneer and cheese stuffing inside a flaky crust spells a great snack.

PANEER PIZZA ROLL

Ingredients

250 grams cottage cheese, (paneer), cut into inch cube
500 grams readymade pizza dough
1 tbsp butter
1 tbsp olive oil + for brushing
1 medium onion, chopped
5-6 sprigs of fresh thyme sprigs
1 tbsps chopped garlic
1 large tomato, chopped
Salt to taste
2 tbsps tomato ketchup
1 tsp red chilli flakes + for sprinkling
Refined flour (maida) for dusting
Mozzarella cheese as required
1 tbsp chopped fresh parsley leaves + to sprinkle
Tomato ketchup to serve

Method

1. Preheat the oven at 180.
2. Heat butter and olive oil in nonstick shallow pan. Add onion and mix well. Pluck the leaves of fresh thyme sprigs and add into the pan. Add the garlic and mix well. Cook till the onion turns translucent.
3. Add tomato, salt and cook till the tomatoes turn soft and pulpy.
4. Add tomato ketchup and mix till well combined.
5. Add paneer and red chilli flakes and mix well. Add parsley leaves and mix. Take the pan of the heat and allow the mixture to cool slightly.
6. Knock back the pizza dough, and lightly knead, divide the dough into 2 equal portions.
7. Dust some flour on work top, place a dough on it and roll into a thin disc.
8. Add the portion of paneer mixture on one side of disc, add half of the paneer mixture and spread it lightly. Sprinkle mozzarella cheese over it and tightly roll into a log. Pinch the edges to seal.
9. Transfer on a baking tray lined with a parchment sheet, generously brush olive oil on the log and sprinkle some red chilli flakes. Place this in the preheated oven and bake for 25-30 minutes.
10. Bring the tray out of the oven and place the pizza roll on a worktop. Garnish with parsley leaves and diagonally cut into slices and arrange on a serving plate.
11. Serve hot with tomato ketchup.
