Ingredients for Paneer Narmada
Paneer - पनीर - 200 gms
Oil - तेल - 2 tbsp
Cashew - काजू - 4, chopped
Red Chilli - लाल मिर्च - 3
Green Chilli - हरी मिर्च - 3,chopped
Ginger - अदरक - 1 tsp, grated
Green Capsicum - हरी शिमला मिर्च - 1/2, chopped
Red Capsicum - लाल शिमला मिर्च - 1/2, chopped
Yellow Capsicum - पीली शिमला मिर्च - 1/2, chopped
Tomato - टमाटर - 1, chopped
Salt - नमक - less than 1 tsp
Schezwan Sauce - शेज़वान सॉस - 2 tbsp
Tomato Sauce - टमाटर सॉस - 2 tbsp
Black Pepper Powder - काली मिर्च - 1/2 tsp
Red Chilli Powder - कश्मीरी लाल मिर्च - 1 tsp
Vinegar - सिरका - 1 tsp
Cornflour - कॉर्नफ्लोर - 2 tbsp

For Paneer Stuffing:
Cashew - काजू - 10-12
Melon Seeds - खरबूजे के बीज - 2 tbsp
Sesame Seeds - तिल - 1 tbsp
Coriander Leaves - धनिया पत्ता - 1 tbsp
Curd - दही - 1 tbsp
Salt - नमक - 1/3 tsp
Red Chilli - लाल मिर्च - 1/4 tsp, coarsely ground
For Slurry:
Refined Flour - मैदा - 2 tbsp
Corn flour - कॉर्नफ्लोर - 2 tbsp
Salt - नमक - 1/8 tsp

How to prepare Paneer Narmada?

1. Take 200 grams of paneer pack and divide it into 4-equal parts.
2. Cut paneer parts into triangular shapes, further cut them from the center into pairs.
3. Add 10-12 cashews, 2 tbsp of melon seeds, 1 tbsp of sesame seeds, 1-2 tbsp of green coriander to the mixer, and blend into a fine paste.
4. Mix 1 tbsp of curd, 1/3 tsp of salt, and 1/4 tsp of red chili powder in the blended mixture.
5. Take paneer in pairs and spread stuffing inside them.
6. Take 2 tbsp of maida and 2 tbsp of cornflour in a bowl. Add water gradually and prepare a pouring consistency slurry.
7. Add 1/8 tsp of salt to the slurry and mix well. Preheat the oil in the Kadai for frying stuffed paneer pieces.
8. When the oil is hot, dip the paneer pieces in the slurry and add them to the oil.
9. Fry the paneer pieces over medium-high heat till light brown.
10. Heat 2 tbsp of oil in the Kadai and fry 4-chopped cashews in medium hot oil.
11. Add 3-red chilies and 3-green chilies (slit lengthways) to the Kadai and roast them briefly.
12. Add 1 tsp of ginger paste and 3-colored capsicum slices and saute them over high heat.
13. Add 1-sliced tomato, less than 1 tsp of salt, and cook them over high heat for 2 minutes.
14. Add 2 tbsp of schezwan sauce, 2 tbsp of tomato sauce, 1/2 tsp of black pepper powder, 1 tsp of Kashmiri red chili powder, 1 tsp of vinegar, and cook over medium heat.
15. After 2 minutes, add paneer pieces and 2 tbsp of cornflour mixture to the Kadai.
16. Add remaining stuffing and cook the dish over low-medium heat till the water dries.
17. Paneer Narmada is ready to be served.
