The paneer in a fiery gravy made from chillies, spices and a coconut base tastes just as delicious. PANEER KOLHAPURIIngredients400 grams cottage cheese, cut into 1 inch cubesMasala paste2 tbsps oil1 inch cinnamon stick8-10 black peppercorns1 black cardamom 4 green cardamoms1 star anise, broken3-4 cloves2 tbsps coriander seeds3-4 Kashmiri dried red chillies4-5 bedgi dried red chillies1 tsp cumin seeds cup grated dried coconut1 tsp poppy seeds (khaskhas)Gravy1 tbsp oil2 bay leaves2 medium onions, finely choppedSalt to taste1 tbsps ginger-garlic paste1 cup tomato puree 2 green chillies, chopped1 tbsp red chilli paste tsp turmeric powder1 tsps coriander powder1 tsp sankeshwari red chilli powder tsp garam masala powder1 medium green capsicum, cut into 1 inch cubes1 tbsp lemon juice2 tbsps chopped fresh coriander leaves + for garnishMethod1. Heat oil in a pan. Add cinnamon stick, black peppercorns, black cardamom, green cardamoms, star anise, cloves, coriander seeds, Kashmiri dried red chillies, bedgi dried red chillies, cumin seeds, and coconut and roast till golden. Add poppy seeds and continue to roast for 1 minute. Take the pan off the heat and allow to cool.2. Transfer the roasted mixture in a grinder jar, add 1 cup water and grind to a fine paste.3. Heat oil in the same pan, add bay leaves and cook for a few seconds. 4. Add onions, salt, mix, and cook till golden brown.5. Add ginger-garlic paste, and saut for 1 minute. Add tomato puree and mix well. Cook till the oil separates.6. Add green chillies, and red chilli paste and mix well. Cook on medium heat for 2-3 minutes, stirring occasionally.7. Add the ground paste and mix well. Cook till oil separates.8. Add turmeric powder, coriander powder, sankeshwari red chilli powder, and garam masala powder and saut for 1-2 minutes.9. Add 1 cups water, mix, and cook for 2-3 minutes. Add capsicum and mix well. Cook for 1-2 minutes.10. Add lemon juice, mix and cook for a few seconds. Add coriander leaves and saut for 1 minute. Add cottage cheese and mix, cook for 1 minute. 11. Serve hot garnished with coriander leaves.
