Paneer Kofta In Palak Gravy
Ingredient Quantity
For Gravy:
Onion cut into cube size 3 no.
Ginger Slice ½ inch
Garlic cloves 10-12 no.
Green chillies 4 no.
Oil 2 tbsp
Butter 2 tbsp + 1 tbsp + for garnish
Cumin seeds 1 tsp
Garlic chopped 1 tbsp
Green chilli chopped 2-3 no.
Salt to taste
Coriander powder 1 tbsp
Cumin powder 1 tsp
Red chilli powder ½ tsp
Garam masala powder 1 tsp
Turmeric powder ½ tsp
Chaat masala ½ tsp
Yogurt ¼ cup
Palak puree 1½ cup
For Kofta:
Paneer grated 1½ cup
Potato grated (Boiled) 2 no.
Ginger chopped 1 tsp
Green chilli chopped 2-3 no.
Salt to taste
Garam masala powder 1 tsp
Corn flour 4 tbsp
Green cardamom powder ½ tsp
Chaat masla 1 tsp
Raisins 2-3 tbsp
Oil for frying

Method:
For Kofta:
1. Take grated paneer in mixing bowl, add boiled grated potato, chopped ginger, green chilli, salt, garam masala powder and corn flour and mix well.
2. Add green cardamom powder and chaat masala and mix well.
3. Divide the mixture in equal portion and make lemon size ball.
4. Take prepared Paneer ball, press slightly between your palm to flatten, place ½ tsp of raisins in the center, and bring in the edges and seal. Shape them into balls again.
5. Take corn flour in plate and roll the prepared paneer ball, repeat the same to shape all koftas balls. Keep it aside.
6. Heat oil in deep pan and deep fry the koftas into hot oil on medium heat till crisp from outer side.
7. Remove in absorbent paper and keep it aside.
For gravy:
1. Take onion, ginger, garlic and green chillies in grinder jar and grind to a smooth paste. Keep it aside.
2. Heat oil and butter in pan; add cumin seeds and sauté till cumin is brown in color.
3. Add chopped garlic, mix well and sauté till garlic is brown in color.
4. Add prepared paste, and mix well.
5. Add little water, mix well and sauté for 8-10 min.
6. Add green chilli chopped and mix well.
7. Add salt, coriander powder, cumin powder, red chilli powder, garam masala powder and turmeric powder, mix well and sauté for 1 min.
8. Add little water, mix well and sauté for 2-3 min.
9. Add yogurt, mix well and sauté for 3-4 min.
10. Add chaat masala and mix well.
11. Add palak puree, mix well and sauté for 1 min.
12. Add ¼ cup of water, mix well and cook for 3-4 min.
13. Add Butter and mix well.
14. Remove in a serving bowl, add fried koftas on it, garnish with coriander spring, butter, and cream on top and serve hot.
