This rich and decadent dessert prepared with cottage cheese, comes from Orissa. It's super easy to make and can satiate your sweet tooth cravings in a jiffy!

PANEER CHENNA PODA

Ingredients

500 grams cottage cheese (paneer), grated
1¼ cups castor sugar
1¼ cups semolina (rawa/sooji)
½ tsp green cardamom powder
1 tbsp chopped pistachios
1 tbsp chopped almonds
Slivered almonds for sprinkling
10-12 pistachios, blanched, peeled and slivered

Method

1. Preheat the oven at 180ºC.
2. Take paneer in a large shallow bowl. Add sugar and semolina and mix well. Keep kneading til the mixture comes together.
3. Add green cardamom powder, pistachios and almonds and mix well.
4. Transfer the mixture into a 6 inch round silicon cake tin. Spread the mixture evenly and even out the top.
5. Sprinkle slivered almonds and pistachios on top. Lightly press them and place the cake tin in the preheated oven and bake for 45-50 minutes.
6. Remove the cake tin from the oven and allow to cool slightly. Demould, cut into wedge and serve.
