Ingredients:-
For Roasted Potato Salad:-
Oil
12-15 Baby Potatoes
Black Pepper, freshly ground
Salt, to taste
8-10 Garlic cloves
2-3 tbsp. Cream Cheese
Chives, chopped

For Soy Emulsion:-
Red, Green and Yellow Bellpeppers, thinly sliced
1-inch Ginger, thinly sliced
Oil
Orange Zest
3 tbsp. Orange Juice
4 tsp. Soy Sauce
Bok Choy

For Bok Choy Salsa:-
Bok Choy, chopped
Salt
Black Pepper
Olive Oil
2 tbsp. Orange Juice

For Seared Salmon:-
Salmon
Salt
Black Pepper
All Purpose Flour
2 tbsp. Olive Oil
2 tbsp. Orange Juice



Method:-
1. In a baking tray add oil, baby potatoes, black pepper and salt. Preheat the oven and bake at 175°C for about 20-22 minutes.
2. Once out of the oven, crush the potatoes with the back of the spoon and add cream cheese, chives and mix well.
3. Heat a pan on low flame and add bellpeppers, oil, orange zest, orange juice and soy sauce.
4. Heat oil in a pan and roast the Bok Choy in it until it is charred a little and then transfer it to the soy emulsion.
5. Chop the Bok Choy as shown and add salt, pepper, olive oil and orange zest to it.
6. Season the Salmon with Salt and Black Pepper and dip the skin side in all purpose flour.
7. Heat olive oil in a pan and add the salmon to it. Sear until the fish turns golden brown in colour.
8. Transfer the fish on the same tray, skin-side down and pour the oil from the pan besides it.
9. Bake for 8 minutes at 175°C.
10. Once baked, transfer the fish onto the pan again skin-side down with the oil from the baking tray. Turn the flame to high and sear the Salmon again cooking on both the sides this time.
11. Squeeze orange juice and cook the Salmon in it.
12. Assemble the dish as shown in the video.
