Palak Sahjan Phali ki SabjiIngredient QuantityDrum stick 2 no.Water 2 cupsTurmeric powder ½ tsp + ½ tspSalt to tasteSpinach leaves 1 bunchTomato cut into small cube 2 no.Oil 2 tbspAsafoetida ¼ tspCumin seeds 1 tspOnion chopped 2 no.Ginger-garlic paste 1 tbspGreen chillies slit 2-3 no.Coriander powder 1 tbspRed chilli powder 1 tspGaram masala powder 1 tspAamchur powder ½ tspCoriander chopped 2 tbspMethod:1. Peeled and cut the drumstick into 2 inch. Long Pieces.2. Heat water in a pan, add drumstick, turmeric powder and salt, mix well and bring to boil for8-10 min.3. Remove in a bowl and keep it aside.4. Put tomatoes in same water and bring to boil for 3-4 min.5. Add spinach leaves, mix well and cook for 1 min.6. Remove in a bowl and keep it aside to cool down.7. Heat oil in a pan, add asafoetida, cumin seeds, mix well and sauté till cumin gets brown incolour.8. Add chopped onion, mix well and sauté for 4-5 min.9. Meanwhile grind the tomatoes and spinach to smooth paste.10. Add ginger-garlic paste and green chillies in pan, mix well and sauté for 3-4 min.11. Add coriander powder, red chilli powder, turmeric powder, garam masala powder and salt,mix well and sauté for 1 min.12. Add drumsticks and leftover water, mix well and cook for 4-5 min.13. Add prepared spinach and tomato paste and mix well14. Add aamchur powder, mix well and cover and cook for 4-5 min.15. Add chopped coriander, mix well and cook for 1 min.16.
