For Palak Paneer Uttapam
1 cup semolina (rava / sooji)
1 cup spinach (palak) puree
1/2 cup curd (dahi)
1/2 tsp ginger (adrak) paste
1/2 tsp fruit salt
salt to taste
5 tbsp oil for greasing and cooking

To Be Mixed Into A Mixture
1/2 cup finely chopped onions
1/2 cup finely chopped tomatoes
1 tsp finely chopped green chillies
1/2 cup thickly grated paneer (cottage cheese)
1 tbsp finely chopped coriander (dhania)
salt to taste

For Serving

Method

For palak paneer uttapam
To make palak paneer uttapam, in a deep bowl, add semolina, palak pure, curd and cup water and mix well.
Heat a non-stick tava (griddle) and grease with a little oil.
Pour a ladle of the batter on it and the paneer mixture over it and press it lightly.
Cook for 1 minute on a medium flame. Smear a little oil over it and along the edges.
Flip over and cook on a medium flame till the uttapam turns brown in colour and crisp from both the sides.
Serve the palak paneer uttapam immediately with green chutney.

tips to make palak paneer uttapam
Make sure to use fresh curd to make this recipe.
Instead of oil you can cook them in butter or olive oil.
Make sure to serve them immediately for the best flavours.
