Here, they come together again to make a very exciting starter, the Palak Paneer Toast. This is a nice and cheesy starter, in which crisp pieces of toast are topped with a lusciously creamy mixture of spinach, paneer and cheese. You must make sure you serve it immediately on preparation, while the bread is crisp, so that you can relish the contrast between the creamy topping and the crisp bread. If you leave it for too long, it will get soggy. You can also try other starter recipes like the Paneer Fritters and the Zucchini Toast .Preparation Time: 20 minutes.Cooking Time: 6 minutes.Makes 10 toasts. For the palak paneer mixture¼ cup spinach (palak) purée1 cup chopped paneer (cottage cheese)1 tbsp butter1 tbsp plain flour (maida)1 cup milk1 cup grated processed cheese2 tsp finely chopped green chilliesSalt and freshly ground black pepper (kalimirch) to tasteOther Ingredients10 toasted bread slicesFor the palak paneer mixture1. Heat the butter in broad non-stick pan, add the plain flour, mix well and cook on a medium flame for 1 minute, while stirring continuously using a whisk.2. Add the milk, salt and black pepper powder, mix well and cook on a medium flame for 2 minutes, while stirring continuously.3. Add the spinach purée, cheese and green chilies, mix well and cook on a medium flame for 3 minutes, while stirring continuously.4. Add the paneer and mix gently. Keep aside.How to proceed1. Place a toasted bread slice on a clean, dry surface, spread 2 tbsp of the prepared palak paneer mixture over it and spread it evenly.2. Repeat step 1 to make 9 more toasts. Serve immediately.
