PALAK KHICHDI

Ingredients

1 cup fresh spinach puree
3 cups cooked rice
3 tbsps butter
1 tsp cumin seeds
1½ tbsps chopped garlic
1 green chilli, finely chopped
1 medium onion, finely chopped
2 medium tomatoes, chopped
Salt to taste
¼ tsp red chilli powder
2 tsps coriander powder
½ tsp garam masala powder
2 tbsps fresh cream + for garnish
Pickle to serve
Yogurt to serve

Method

1. Heat 2 tbsps butter in a non-stick deep pan, add cumin seeds and sauté till it changes colour. Add garlic and green chillies. Sauté for a minute on medium heat.
2. Add onion and sauté on medium heat till it turns golden brown.
3. Add tomatoes, salt and mix well. Cover and cook till the tomatoes turn pulpy.
4. Add red chilli powder, coriander powder and garam masala powder. Mix well. Add ¼ cup water and combine well.
5. Add spinach puree and mix well. Add cooked rice and mix till well combined.
6. Add ¼ cup water and mix well. Cover and cook on medium heat for 2-3 minutes.
7. Add cream and remaining butter and mix well. Switch the heat off.
8. Transfer khichdi in a serving bowl. Garnish with fresh cream.
9. Serve hot with pickle and yogurt.
