A bowl full of health and nutrition, don’t worry, this palak khichdi has an amazing taste too! PALAK KHICHDIIngredients1 cup fresh spinach puree3 cups cooked rice 3 tbsps butter1 tsp cumin seeds1½ tbsps chopped garlic1 green chilli, finely chopped1 medium onion, finely chopped2 medium tomatoes, choppedSalt to taste¼ tsp red chilli powder2 tsps coriander powder½ tsp garam masala powder2 tbsps fresh cream + for garnishPickle to serveYogurt to serveMethod1. Heat 2 tbsps butter in a non-stick deep pan, add cumin seeds and sauté till it changes colour. Add garlic and green chillies. Sauté for a minute on medium heat.2. Add onion and sauté on medium heat till it turns golden brown. 3. Add tomatoes, salt and mix well. Cover and cook till the tomatoes turn pulpy.4. Add red chilli powder, coriander powder and garam masala powder. Mix well. Add ¼ cup water and combine well.5. Add spinach puree and mix well. Add cooked rice and mix till well combined.6. Add ¼ cup water and mix well. Cover and cook on medium heat for 2-3 minutes.7. Add cream and remaining butter and mix well. Switch the heat off.8. Transfer khichdi in a serving bowl.
