Paella | Sanjeev Kapoor Khazana

PAELLA

Ingredients

300 grams chicken on bone with skin, cut into 2 inch pieces
8-10 clams
7-8 big prawns, peeled and deveined with tail intact
200 gms rawas fish, cut into 1 inch cubes
4 chicken sausages
1 cup Arborio rice
2 tsps red paprika powder
1 tsp dried oregano
Crushed black peppercorns to taste
Sea salt to taste
2 tbsps oil
2 medium white onions, sliced
1 tbsp chopped garlic
½ cup tomato puree
Few strands of saffron
2 cups fish stock
2 sprigs of oregano
¼ cup boiled green peas
1 tbsp lemon juice
Flat parsley for garnish

Method

1. Marinate the chicken with red paprika powder, dried oregano, crushed black pepper, and sea salt.
2. Heat 1 tbsp oil in a paella pan, add the chicken. Sear on high heat till golden brown from both sides. Take it off the heat and set aside.
3. Heat remaining oil in the same pan, add onions and sauté till golden brown. Add garlic, tomato puree and mix well. Add Arborio rice and mix well.
4. Add 1 cup fish stock. Mix well. Sauté on medium heat for 10-12 minutes.
5. Add sea salt,saffron, crushed black pepper, chicken, remaining fish stock and mix well. Cook for 5-6 minutes
6. Add clams, diagonally slice chicken sausages into 4 pieces and add in the pan. Mix well. Cook for 10 -12 minutes on medium heat.
7. Add prawns, rawas fish, and fresh oregano. Add some water and cook for 5-7 minutes.
8. Add green peas and lemon juice. Mix well and cook for 2-3 minutes.
9. Garnish with flat parsley. Serve hot.
