Last week I visited the Asian grocery store to stock up on pantry items and items for lunches. Today I show you how to make Vietnamese summer rolls for your lunchbox (at 6:30 am, with children interrupting, no less!), so if I can do it, you can do it!Summer Rolls are super delicious, involve dipping (which my children love), and can be filled with anything from traditional shrimp and pork, to lunch meat like sliced turkey, rotisserie chicken, meatballs, marinated tofu, avocado, tropical fruits like mango + the traditional rice noodles, herbs, shredded carrot and cucumber I have prepared and ready for wrapping. I make tons of Asian foods for my children ranging from potstickers and dipping sauce, veggies and rice, fried rice, homemade orange chicken, and homemade sushi, so these are another great option to mix up your lunch packing routine and also utilize fresh ingredients that comply with your diet and your children's tastes.
