Orange zest and orange squash adds a great citrusy flavour to this dish that is meant to be eaten chilled!Preparation Time: 10 minutesCooking Time: 10 minutesMakes 4 servings Ingredients1/2 cup orange segments , cut into halves1 cup broken wheat (dalia)1/2 cup finely chopped parsley2 tbsp finely chopped spring onion greens1 tbsp grated orange rind1/4 cup orange squashsalt and freshly black ground pepper powder to taste2 tbsp lemon juice2 tbsp olive oil1/4 cup tomato cubesFor The Garnish1 tbsp roasted sesame seeds (til)Method 1. Combine the broken wheat with 2 cups of water in a sauce pan and cook on a medium lame for 8 to 10 minutes or till it is soft.2. Drain and refresh it with cold water and again drain well.3. Transfer the broken wheat to a bowl, add the parsley, spring onion greens, orange zest, orange squash, salt, black pepper powder, lemon juice and olive oil and toss well.4. Refrigerate for atleast 2 hours.5. Just before serving, add the orange segments and tomatoes and toss well.6. Serve immediately garnished with sesame seeds.Tips1. If cous-cous is available, use that instead of broken wheat (dalia).
