Orange Pickle
Ingredients:
Musambi/Sweet Lime, preferably green ones - 4 big
Til oil - 2 or 3 tbsp
Mustard seeds - 1 tsp
Methi seeds - 1 tsp
Kashmiri chilli powder - 2 tsps
Jaggery powder- 1 tsp (optional)
Salt - to taste
Asaefotida - tsp
Method:
Wash and wipe the Musambi
Chop them in desired sizes
Dry roast methi seeds in a pan till golden
Grind to a powder and keep it aside
Heat til oil in a heavy pan
Add mustard seeds and allow it to splutter
Add the chopped Musambi and stir fry over medium heat till soft
Now add asaefotida
Add salt and Kashmiri chilli powder
Keep cooking adding little more oil if required
When the Musambi is cooked well, add the jaggery powder and toss well together
Finally add the methi powder and stir mix everything thoroughly well over medium flame for few seconds
Musambi Pickle is now ready to use!
Combine with a bowl of steaming rice or rotis or Idli or dosa
