ORANGE MARMALADE: HEAVENLY CITRUS AROMA IN A BITE

Traditional and the most natural way to make a prefect Orange Marmalade:
Orange Marmalade is almost essential on our breakfast table for having a vibrant, happy, and energetic day in the Winter. If you like citrusy taste, you will love this recipe with less-sugar, lots of aroma combination. Treat yourself to a bite of wonderful citrusy freshness and delightful taste! It is one of my favourite winter treats, I believe it will be yours as well!

Ingredients
5 (~1.2 kg) Navel Oranges
3 cups (~600 g) sugar
1 cinnamon stick

Directions
PREPARATION
Thoroughly wash and drain the oranges. Peel the skins
Save half of the orange skins for the Marmalade
If you prefer a less acidic taste, you can lightly shave off the orange-coloured top layer

The skin of the orange:
Finely dice the orange skins
Place the diced orange skins into a small pot
Add 1 L of boiling water
Set the stove to medium-high heat and boil for 15 minutes
Then, drain the water and transfer the skins to a fresh pot of boiling water. Boil the orange skins for another 15 minutes
I like the strong citrus aroma of orange skins, but if you prefer a milder marmalade, then drain and boil the skins once more with fresh water
Drain the water and set aside the diced orange skins for later use

The Fruit:
Clean the pith (white stringy parts) and dice the orange fruits into 1 cm pieces
Place the diced orange fruits into a wide and shallow pot
Add 3 cups of sugar

COOKING
Place the orange fruits on medium-high heat and stir for 8-10 minutes, until the orange foam disappears
Then add the cinnamon stick and the pre-cooked orange skins into the pot
Turn down the heat to medium and cook the Marmalade for 20-25 minutes while stirring from time to time
Stir faster as the juice of the mixture is slowly reduced
Taste the consistency using a cold plate. Drop the juice of the Marmalade onto the plate and check its flows. This will be the consistency of the Marmalade once it cools
If the flow is slow enough for you, turn off the stove

JARRING
Discard the cinnamon stick, carefully place the hot Orange Marmalade into clean jars
Since this recipe has relatively less sugar than jams, hot jarring helps in natural preservation
Once you open a jar, keep it in the fridge to prevent mold
Orange Marmalade is one of my favourite winter treats! You can add lemon and grapefruit to this recipe to enhance the citrus zest.
