Oppa Recreates His Mum's Homemade Kimchi Eatbook Cooks EP 2

Stephen tries his hand at making his mum's kimchi recipe! For those who want to try, here's the full recipe:

Ingredients

2 wong bok cabbages
2 thumbs of ginger
2 bulbs of garlic
2 tbsp salted krill
60ml fish sauce
1/4 cup green plum extract
1/2 cup chilli flakes
Water
4 white onions
4-5 chives
5-6 spring onions

Cabbage preparation

1. Cut each cabbage leaf down length-wise, then in thirds.
2. Rinse the cabbage thoroughly.
3. Sprinkle a generous amount of salt on the cabbage.
4. Leave the cabbage to rest for 30 minutes.
5. Flip cabbage and leave it to rest for another 30 minutes.
6. Flip cabbage again and leave it to rest for another 30 minutes.
7. Rinse the cabbage.

Kimchi preparation

1. Blend ginger, garlic, salted krill and fish sauce with a blender.
2. Add green plum extract and chilli flakes.
3. Add water bit by bit until paste turns into a sambal chilli consistency.
4. Cut onions into thin slices.
5. Cut spring onions length-wise into 5cm chunks.
6. Cut chives into 5cm chunks.
7. Mix onions, spring onions, chives and cabbage into kimchi paste.
