Onion Rings | Not So Junky - by Chef Siddharth | Sanjeev Kapoor Khazana

ONION RINGS

Ingredients

4-5 medium onions, cut into roundels, layers separated and soaked in cold water
1 cup cornflakes
½ cup fresh brown breadcrumbs
Salt to taste
½ teaspoon smoked paprika
¾ teaspoon onion powder
¾ teaspoon garlic powder
¾ cup whole wheat flour (atta)
2-3 tablespoons yogurt
Oil spray as required
Dip
3-4 tablespoons hung yogurt
1 tablespoon cheese spread
1 teaspoon garlic paste
½ teaspoon paprika
½ tablespoon mustard paste
½ teaspoon red chilli flakes
1 tablespoon chopped chives
Salt to taste

Method

1. Put the cornflakes in a bowl and crush coarsely. Add breadcrumbs and mix.
2. Add salt, paprika, onion powder and garlic powder and mix well.
3. Drain onion rings on absorbent paper.
4. Preheat oven at 180º C.
5. Mix wheat flour, salt, little water and yogurt and mix well into a lump-free coating batter. Add more water to adjust the consistency.
6. Dip the onion rings in the batter and coat with the breadcrumbs mixture. Repeat the process once again.
7. Spray oil on a baking tray and place the prepared onion rings on it. Spray some more oil on top, put the tray in the preheated oven and bake for 12-15 minutes.
8. To make the dip, mix hung yogurt, cheese spread, garlic paste, paprika, mustard paste, chilli flakes and chives in a bowl. Add salt and mix again.
9. Transfer the prepared dip in a serving bowl and serve with onion rings.
