Ingredients:

For Dough:
2 cups Maida
1/4 cup Oil
1/2 tsp Ajwain/Carrom seeds
Salt to taste

For Filling:
3 large Onions chopped fine
2 Green Chillies chopped fine
1 tsp Kalonji/Nigella seeds
1 tbsp Red Chilli powder
1/2 tsp Garam masala
1 tsp fennel
2 tbsp Oil
2 tsp Coriander powder
2 tbsp Besan
Chopped Coriander leaves
Salt to taste
Oil for deep frying
Method: Combine the Maida, Ajwain, Salt and oil to make a crumbly texture. Add water little by little to make a stiff dough. Keep aside. In a pan heat t tbsp Oil and add the Kalonji, Fennel, Green Chillies, chopped Onions and saute till Onions change colour. Then add Salt, Red Chilli powder, Coriander powder, Garam masala, Besan and combine well. Saute for a minute. Finally, put in the Coriander leaves and mix well. Keep the filling aside to cool.
Roll out small balls of dough 2-3 inches in diameter, put in 1 tbsp of filling and pull the edges together to seal the Kachori. Roll these balls once more into thick discs and fry in medium hot Oil till golden brown. Hot Kachoris are ready to serve with Tamarind chutney. Enjoy.
