One pot Lentils Rice recipe (Healthy Chana Dal Khichdi Recipe) | Eat East Indian

This gluten free, super yum and easy to prepare lentils and rice dish called Khichdi is not only healthy but a complete meal in itself. Give it a try and am sure you will love it.

Ingredients:
1 tsp Jeera/Cumin seeds
2 tbsp oil/ Butter
1 small piece of onion chopped
1 tbsp ginger-garlic paste ( or small quantity of chopped ginger-garlic)
1 tsp turmeric
1 tsp salt ( Adjust per taste)
1 tsp paprika
(or 1/2 tsp red chilli pwd)
1/2 cup rice
1 cup chana dal/ yellow split chickpea lentils
1/2 cup frozen veggies
12 tsp spice blend of your choice ( e.g. garam masala, curry powder, madra curry, sambhar masala powder etc) I used 1/2 tsp quorma masala
3 cups of water
I used pressure cooker for the recipe but you can make it on a pot as well.

Method
1. Heat oil in a pressure cooker and add cumin seeds
2. Add onions and ginger-garlic paste. Mix well and then saute for 2-3 mins. Add spices. once onions are no longer raw (2-3 mins), add lentils, rice and veggies.
3. Mix well and add water.
4. Put the lid on and then cook for 3 whistles. Turn the gas off and let the cooker cool down before opening.
Enjoy this super delicious dish with plain yogurt/pickle or chutney of your choice.
