ओलान | Olan | Sanjeev Kapoor Khazana

Classic and delicious curry from Kerala, Olan, is a must during festivals. It is a subtle flavored coconut based curry made using red chawli and ash-gourd. This simple and delicious recipe can be prepared in a jiffy.

Ingredients

1½ cups boiled red chawli
200 grams ash gourd (peta), peeed and cut into 1 inch cubes
2-3 green chillies, slit
10-12 curry leaves
1 cup thin coconut milk
Salt to taste
½ cup thick coconut milk
1 tbsp coconut oil

Method

1. Heat an earthen vessel. Add red chawli, ash gourd, green chillies, curry leaves, thin coconut milk and salt and mix well. Bring the mixture to a boil. Reduce the heat to medium, cover and cook till the ash gourd is cooked completely.
2. Switch the heat off and add the thick coconut milk and mix well. Add coconut oil, mix and transfer into a serving bowl. Serve hot.
