Be it #Navratri or #Diwali, everyone wants to recreate at least a few traditional recipes. Therefore Sujan Fun Kitchen is here with the traditional recipe of Okkarai - it’s Mrs.Meenakshi Rajagopalan, my MIL who has so sweetly agreed to make this Okkarai for us. So let’s watch MILs deft turning out of the Okkarai.
Ingredients:
Bengal gram Dal/Kadala Paruppu - 1 measure
Powdered jaggery - 1 measure
Cardamom powder - to taste
Cashews raisins as required
Ghee - 2 tbsp or as required
Method:
Wash the Dal and soak in water for at least 2 hours
Drain the Dal of the soaked water and grind in mixer without adding water - sprinkle water if required
Grind to a grainy texture
Steam the ground Dal till non sticky
Allow to come to room temperature
Now break up the steamed dal and grind in a maxi to JUST crumble and crush
Or instead of mixer, crumble the steamed dal with your hands
Keep aside in a wide pan
In a heavy pan, add the jaggery
Pour water over the jaggery to cover it
Make a thick jaggery syrup - test in a bowl of water; should be able to roll the drop of syrup
Pour the jaggery syrup into the crumbled Dal
Toss well till everything is blended well
Now heat some ghee in a pan
Fry cashews to a light golden colour over low flame
Add the raisins and fry till balloons up
Add the grated coconut and fry till lightly toasted
Add cardamom powder
Switch off flame
Pour the sizzling garnish to the Okkarai
Enjoy Okkarai with family and friends
