Therefore Sujan Fun Kitchen is here with the traditional recipe of Okkarai - it’s Mrs.Meenakshi Rajagopalan, my MIL who has so sweetly agreed to make this Okkarai for us. So let’s watch MILs deft turning out of the Okkarai.Ingredients:Bengal gram Dal/Kadala Paruppu - 1 measurePowdered jaggery - 1 measureCardamom powder - to tasteCashews raisins as required Ghee - 2 tbsp or as required Method:Wash the Dal and soak in water for at least 2 hoursDrain the Dal of the soaked water and grind in mixer without adding water - sprinkle water if required Grind to a grainy textureSteam the ground Dal till non stickyAllow to come to room temperature Now break up the steamed dal and grind in a maxi to JUST crumble and crushOr instead of mixer, crumble the steamed dal with your handsKeep aside in a wide panIn a heavy pan, add the jaggeryPour water over the jaggery to cover itMake a thick jaggery syrup - test in a bowl of water; should be able to roll the drop of syrupPour the jaggery syrup into the crumbled Dal Toss well till everything is blended wellNow heat some ghee in a panFry cashews to a light golden colour over low flameAdd the raisins and fry till balloons upAdd the grated coconut and fry till lightly toastedAdd cardamom powderSwitch off flamePour the sizzling garnish to the OkkaraiEnjoy Okkarai with family and friends#sugarfree#ThirunelveliUkkaraihttps://sujankitchen.wordpress.com/2021/10/21/866/
