Oatmeal Okonomiyaki (Gluten-Free Recipe)

Difficulty: Very Easy
Time: 20min
Number of servings: 1

Ingredients:
30g (1oz.) oats
100ml water
1/2 tsp. Kombu Dashi powder *other soup stock powder is OK https://amzn.to/3NArFF2
100g (3.5oz.) shredded cabbage
15g (0.5oz.) chopped green onions
1 tsp. Sakuraebi (dried small shrimp) *if you have is OK https://amzn.to/3DHuD6p
1 egg
50g (1.8oz.) thinly sliced pork rib *bacon is OK
cooking oil
* Okonomiyaki sauce
* mayonnaise
* Katsuobushi (bonito flakes)
* Aonori (green laver)

Okonomiyaki Sauce from scratch (about 2 servings):
2 tbsp. Worcestershire sauce (or Tonkatsu sauce) + 2 tbsp. ketchup + 1 tsp. sugar (or agave syrup)

Directions:
1. In a large microwavable bowl, mix oats, Dashi powder, and water. Microwave at 600w for 1.5min.
2. Add egg, shredded cabbage, chopped green onions, and Sakuraebi (or any condiments are ok), then mix well until the cabbage gets wilted.
3. Heat cooking oil in a frying pan. Spread the batter in a circular shape, place pork meat on top, cover, and cook on low for about 5 minutes. Then flip it over, cover, and cook the other side for 5 minutes until golden brown.
4. Serve on a plate, and arrange the toppings.
