These cookies make perfect Christmas Cookies for the holiday or anytime really. I will show you how to make these easy cookies in this video. Hope you give them a try!

Snowball Cookie Recipe
Ingredients:
1 cup butter, softened
1/2 cup powdered sugar
1 tsp. vanilla extract
1 1/4 tsp. almond extract
2 cups flour
1/2 tsp. salt
1 cup raw pecans, toasted and chopped fine

Directions:
Preheat oven to 350 degree F.
Refrigerate the Nutella in the refrigerator until it firms up enough to scoop it out into little balls. Use a tsp. measuring spoon to scoop out the Nutella.

Place the little balls on a wax paper covered baking sheet and freeze for a minimum of hour.

Pour the pecans onto a baking sheet and bake for about 8 to 10 minutes in a 350 degree F. oven. Let these cool for a good 15 minutes. Once cooled, either chop them fine or place them in a food processor to chop fine.

After the pecans are processed, measure out 1 cup of the nuts.
Cream together the softened butter with the vanilla and almond extracts.

Add the powdered sugar a little at a time until it is incorporated. Then add the flour and salt a little at a time also. Scrape down the sides of the mixing bowl occasionally.

Pour in the pecans and mix. You will want to stir these in as well to make sure they get evenly mixed in.

I like to place the dough into the refrigerator for 15 minutes to firm it up a bit.
When you are ready to start making cookies, grab about a tablespoon of cookie dough and flatten it to about inch thick and place 1 frozen Nutella ball in the middle of the dough.

You can pinch it up around the Nutella ball and add a bit more dough to completely cover the Nutella ball.
Keep the rest of the Nutella balls in the freezer as you make these, only pulling out one Nutella ball at a time as you need one.

Once youve made all the balls, place them in the oven at 350 degrees F. for 13 to 16 minutes or until the bottom of the cookies is a nice golden brown.

Let these cookies cool for 4 or 5 minutes and then roll them in powdered sugar and place on a wire rack. You will go back over the cookies a second time and dust them again with powdered sugar as the sugar will absorb into the cookies on the first go around.

For the second dusting of powdered sugar, place the powdered sugar in a strainer and tap the side of it to lightly dust the cookies.

Store the cookies in a tight fitting container for up to 3 to 4 days.
