Noodle Soup In A Jar | Sanjeev Kapoor Khazana

Fresh cut vegetables cooked with noodles to make this delicious soup. Served in a jar.

NOODLE SOUP IN A JAR

Ingredients

½ cup boiled noodles
½ tablespoon oil
1 tablespoon chopped garlic
1 inch galangal, finely chopped
1 inch lemon grass
2-3 bird eye chillies, finely chopped
1 inch celery, finely hopped
2-3 spring onion bulbs, finely chopped
1 medium carrot, finely chopped
100 grams boneless chicken, cut into ½ inch pieces
3 cups vegetable stock
Salt to taste
Crushed black peppercorns to taste
1 inch pandan leaf
1 tablespoon red chilli sauce
1-2 kaffir lime leaves
1 stalk spring onion greens, finely chopped
Fresh basil leaves for garnishing

Method

1. Heat oil in a non-stick pan. Add garlic, galangal, lemon grass, bird eye chillies and sauté for 30 seconds. Add celery and spring onion bulbs and sauté for a minute.
2. Add carrot and sauté for a minute. Add chicken, mix and cook for a minute. Add vegetable stock and mix. Add salt, crushed peppercorns, torn pandan leaf and chilli sauce, mix and boil till the chicken is fully cooked.
3. Add torn kaffir lime leaves and some spring onion greens, mix and cook for a minute.
4. Put some noodles in individual jars and pour some soup mixture.
5. Serve hot garnished with basil leaves.
