Served in a jar.NOODLE SOUP IN A JARIngredients½ cup boiled noodles ½ tablespoon oil1 tablespoon chopped garlic1 inch galangal, finely chopped1 inch lemon grass2-3 bird eye chillies, finely chopped1 inch celery, finely hopped2-3 spring onion bulbs, finely chopped1 medium carrot, finely chopped100 grams boneless chicken, cut into ½ inch pieces3 cups vegetable stockSalt to taste Crushed black peppercorns to taste 1 inch pandan leaf1 tablespoon red chilli sauce1-2 kaffir lime leaves1 stalk spring onion greens, finely choppedFresh basil leaves for garnishingMethod1. Heat oil in a non-stick pan. Add garlic, galangal, lemon grass, bird eye chillies and sauté for 30 seconds. Add celery and spring onion bulbs and sauté for a minute.2. Add carrot and sauté for a minute. Add chicken, mix and cook for a minute. Add vegetable stock and mix. Add salt, crushed peppercorns, torn pandan leaf and chilli sauce, mix and boil till the chicken is fully cooked. 3. Add torn kaffir lime leaves and some spring onion greens, mix and cook for a minute.4. Put some noodles in individual jars and pour some soup mixture. 5.
