Nolen Gur Payesh | Bengali Sweet Recipe | FoodFood

A very popular Bengali sweet prepared on special occasions with rice, milk & date palm jaggery.

NOLEN GUR PAYESH

Ingredients

½ cup nolen gur
⅓ cup Gobinda Bhog rice, soaked for 30 minutes, drained and dried
1 tsp ghee
¼ cup cashew nuts
5-6 cups full fat milk
1 tbsp raisins, soaked and drained + for garnish

Method

1. Heat 1 tsp ghee in a non-stick pan, add cashew nuts and sauté till they turn golden brown. Drain them on a plate and set aside until use.
2. Add rice into the same pan and sauté for a minute. Transfer into a bowl and set aside until use.
3. Heat milk in the same pan, let it come to a boil, reduce the heat to low and add rice and mix well. Cook on low heat for 15-20 minutes or till the rice is cooked completely and the mixture slightly thickens, stirring in between.
4. Switch the heat off, add nolen gur and mix and cook till gur melts. Reserve a few fried cashew nuts for garnish and add the remaining fried cashew nuts in the pan along with raisins and mix.
5. Transfer into serving bowls, garnish with fried cashew nuts and raisins and serve.
