A very popular Bengali sweet prepared on special occasions with rice, milk & date palm jaggery.NOLEN GUR PAYESHIngredients½ cup nolen gur⅓ cup Gobinda Bhog rice, soaked for 30 minutes, drained and dried1 tsp ghee¼ cup cashew nuts5-6 cups full fat milk1 tbsp raisins, soaked and drained + for garnishMethod1. Heat 1 tsp ghee in a non-stick pan, add cashew nuts and sauté till they turn golden brown. Drain them on a plate and set aside until use.2. Add rice into the same pan and sauté for a minute. Transfer into a bowl and set aside until use.3. Heat milk in the same pan, let it come to a boil, reduce the heat to low and add rice and mix well. Cook on low heat for 15-20 minutes or till the rice is cooked completely and the mixture slightly thickens, stirring in between.4. Switch the heat off, add nolen gur and mix and cook till gur melts. Reserve a few fried cashew nuts for garnish and add the remaining fried cashew nuts in the pan along with raisins and mix. 5.
