No oil prawn Thai Curry ( Serves 2)

Ingredients

-200 gms cleaned and deveined prawns
-8 to 10 Cauliflower florets, some cubed carrots ( steamed)
- 3-4 birds eye chillis
- 2 cups coconut milk
- 1 tbs Lime juice

Curry paste Ingredients

- 5/6 dry red chillies soaked in hot water
- One onion chopped
- 5-6 cloves garlic
- One lemon grass stem, finely cut
- Handful of coriander stems
- 1/4 tsp coriander seeds
- 1 Tbs chopped ginger
- 4-5 kaffir lime leaves
- 1/4 tsp white pepper powder
- Fish sauce to taste

Method

-Blend all the curry paste ingredients in a grinder
- Add the prepared paste in a pan and dry roast for 2/3 minute.
- Add the steamed vegetables and mix well with the paste. Add the coconut milk and cook for 3-4 minutes.
- Add the prawns, cook for a minute and then add fish sauce and chillis. Mix well.
- Add the lemon juice, mix well and shut the gas off. Served best with steamed Jasmine rice
