NICOISE SALAD

In this episode, I'd like to share with you 'Nicoise Salad' recipe. French for 'as prepared in Nice'. It is not just a salad but a full meal salad. We like to eat it for dinner, especially during the summer. It tastes as good as it looks! And this salad is meant to be a 'composed' salad, with each ingredient arranged on a serving plate, then drizzled with the dressing. So you need a plan before starting :)

INGREDIENTS

2 potatoes
250 gr. (500 pound) green beans
1 iceberg lettuce
2 eggs
150 gr. (300 pound) canned tuna
4 cherry tomatoes
2-3 tbsp of black olives
2-3 tbsp capers
2 cloves garlic

FOR THE DRESSING:
1/2 lemon juice
1 tbsp vinegar
1 tsp mustard
1 tsp dried basil
Salt, pepper, olive oil

DIRECTIONS

Fill a pan with cold water, add the rinsed potatoes.
Add a clove of garlic, a pinch of salt and bring to a boil.
Meanwhile, place the eggs in another pan, cover with water and bring to a boil.
To make the dressing: combine the mustard, vinegar, lemon juice, dried basil, 1/4 cup olive oil, 1/4 tsp salt, black pepper to taste, then mix well and set aside.
Wash the green beans under running water and remove both ends of the beans.
Wash and dry well the lettuce.
When the eggs comes to a boil, simmer for another 2-3 minutes, then turn off the heat and cover with a lid for about 10 minutes.
When the potatoes comes to a boil, simmer for another 15-20 minutes and make sure they are fork tender.
Transfer potatoes to a bowl, let cool down a bit.
Add the green beans into the reserved water and simmer for 3 minutes.
Cut the potatoes into cubes, sprinkle with a pinch of salt and drizzle 2-3 tbsp dressing over top.
Heat up 2-3 tbsp of olive oil in a pan and add the drained beans.
Sprinkle black pepper to taste, a pinch of salt, 1 clove garlic and saute for 3-4 minutes, while stirring over medium heat.
Cut the peeled eggs and tomatoes in half, sprinkle with a pinch of salt and pepper.
When ready to serve, spread the one-bite size lettuce over the base of a large serving plate.
Drizzle 2-3 tbsp dressing over top.
Place potatoes in the middle.
Arrange the green beans around the potatoes.
Spread tuna on top of potatoes.
Then arrange the eggs, tomatoes and olives on the plate as desired.
Place capers on top of the tuna.
Last but not least, drizzle over the remaining dressing, clean the plate with a paper towel if needed and serve.
