NASI GORENG

Ingredients

8 chicken supremes
Marinade
Salt to taste
½ tbsp lemon juice
1 tsp soy sauce
½ tsp red chilli powder
Peanut sauce
2 tsps oil
1 tbsp chopped garlic
1 small onion, chopped
¼ cup crushed roasted peanuts
2 tbsps tomato puree
2 tsps soy sauce
Salt to taste
½ tsp red chilli powder
1 tsp honey
½ tsp lemon juice
Sichuan rice
3 cups cooked rice
2 tsps oil
3 spring onions, chopped
1½ tbsps Sichuan sauce
Salt to taste
Fried egg
1 egg
1 tsp oil
Salt to taste
Crushed black pepper to taste

Method

1. In a bowl, add the chicken pieces, salt, lemon juice, soy sauce, red chilli powder, mix well. Set aside to marinate for 10-15 minutes.
2. Heat oil in a non-stick pan, add garlic, onion, and cook till translucent. Add peanuts and tomato puree, soy sauce, salt and mix well. Add ¼ cup water. Cook for 2-3 minutes.
3. Add red chilli powder, lemon juice and honey, mix well. Set aside.
4. Heat oil in a non-stick pan add the marinated chicken pieces and cook till done. Set aside.
5. Heat oil in a non-stick wok, add the spring onion bulbs, sauté till translucent. Add Sichuan sauce, cook for 1-2 minutes.
6. Add the cooked rice, mix well. Add salt to taste and spring onion greens, mix well and set aside.
7. Heat oil in a small non-stick pan, break the egg in it, sprinkle salt and crushed black peppercorns. Cook each side for a minute and set aside.
8. Take a serving plate, add the prepared rice on it, place the chicken pieces on top, ladle the peanut sauce on it, garnish with spring onion greens and serve hot along with the fried egg on the side.
