Nankhatai are Indian eggless shortbread cookies made with flour, ghee, sugar & cardamom powder. In the earlier days these were made with maida or all- purpose flour. But these can also be made with whole wheat flour.

This nankhatai recipe uses gram flour or besan as it makes the cookies very aromatic. Semolina or suji is used to add a delicate crunch. However it can be skipped.
