Nachos | Not So Junky - by Chef Siddharth | Sanjeev Kapoor Khazana

NACHOS

Ingredients

½ cup cornmeal + for dusting
½ cup whole wheat flour
½ cup finger millet (ragi) flour
½ cup refined flour
¼ teaspoon turmeric powder
1 tablespoon oil
Salt to taste
1 tablespoon pumpkin seeds
1 tablespoon flax seeds
Refried beans for topping
10 gram processed cheese
Fresh coriander sprigs for garnishing
Spice mix
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika
Salt to taste
Crushed black peppercorns to taste
Sauce
1 tablespoon whole wheat flour
½ tablespoon oil
½ tablespoon butter
1 cup low fat milk
Salt to taste
Crushed black peppercorns to taste
Salsa
1 medium tomato, finely chopped
1 medium onion, finely chopped
1 small green capsicum, finely chopped
1 tablespoon chopped fresh coriander leaves
1 teaspoon smoked paprika
1 tablespoon tomato ketchup
Juice of ½ lemon
Salt to taste
½ teaspoon Tabasco sauce

Method

1. Mix together cornmeal, wheat flour, finger millet flour and refined flour in a bowl. Add turmeric powder, oil and salt, mix and knead into a semi-soft dough using sufficient water.
2. Add pumpkin seeds and flax seeds and knead well. Set aside to rest for 10-15 minutes.
3. Preheat oven at 180º C.
4. Divide the dough into two equal portions, dust them with cornmeal and roll out into large discs, one by one.
5. Using a medium size cookie cutter, cut out roundels from the discs, prick them all over and cut into 4 pieces.
6. Place them on a baking tray, put the tray in the preheated oven and bake for 12-15 minutes.
7. To make the spice mix, mix together onion powder, garlic powder, paprika, salt and crushed peppercorns in a bowl.
8. To make the sauce, heat oil and butter in a non-stick pan. Add wheat flour and milk, whisk and cook till the sauce thickens.
9. Add salt and crushed peppercorns and mix well. Set aside.
10. To make the salsa, mix together tomato, onion, capsicum, coriander leaves, paprika, tomato ketchup, lemon juice and salt in a bowl. Add Tabasco sauce and mix.
11. Put some nachos on a serving plate. Top with refried beans.
12. Sprinkle spice mix on the remaining nachos and arrange them on the refried beans. Drizzle the sauce and top with salsa and grated cheese.
13. Garnish with coriander sprigs and serve immediately.
