Mutton Rice Platter

Ingredients for Mutton Preparation:
Mutton Bones 500 g
Onion cubes 1 cup
Garlic cloves 4
Ginger pods 4-5
Water 1 liter
Coriander seeds 1 tbsp
Cumin seeds 1 tbsp
Salt 1 tbsp
Bay leaves 2

Ingredients for Sauted Veggies:
Capsicum (julienne) 1 cup
Onion (sliced) 1 cup
Carrots (julienne) 1 cup
Oil 1/4 cup

Ingredients for mutton boneless:
Oil 1/4 cup
Ginger garlic paste 2 tbsp.
Boneless mutton 1 kg
Onion paste 1 cup
Tomato puree 1 cup
NESTL MILKPAK Yogurt 1 cup
Cumin powder 1 tbsp.
Turmeric powder 1 tsp
Coriander powder 1 tbsp.
Salt 1 tsp
Red chili flakes 1 tbsp.
Red chili powder 1 tbsp.
Water 1 cup

Ingredients for Rice Preparation:
Mutton stock 4 cups
Oil 1/4 cup
Cumin seeds 1 tbsp
Rice Soaked 2 cups
Salt 1 tbsp.
Onion (sliced) 1/2 cup
NESTL MILKPAK Yogurt 1 cup
Black cardamom 2-3
Bay leaves 2
Mutton stock 4 cups

Ingredients for Mutton Chops:
Mutton chops 8 pcs
NESTL MILKPAK Yogurt 1 cup
Lemon juice 2 tbsp
Tikka masala 2 tbsp.
Ginger garlic paste 1 tbsp
Papaya paste 1 tbsp.
Red chili flakes 1 tbsp.

Directions for Mutton Stock Preparation:
1. In preheated pot add water, mutton bones, onion, garlic, ginger, coriander seeds, cumin seeds, salt and bay leaves. Cover and cook for 20-25 mins or until stock is done.
2. Skim off the scum. Remove the bones and reserve the stock for later use.
Directions for Sauted Veggies Preparation:
3. In a preheated pan add oil, capsicum, onion and carrots. Cook for 1-2 mins. Set aside.
Directions for Boneless Mutton Preparation:
1. In a preheated pan add oil, onion paste and cook for a minute. Then Add boneless mutton and cook until color changes.
2. Now add ginger garlic paste and mix it well. Now add cumin powder, turmeric powder, coriander powder, red chili flakes, salt and red chili powder. Mix it well then add tomato puree and water, cover and cook for 15-20 mins or until the meat is fully cooked. Now add NESTL MILKPAK Yogurt and cook until oil separates. Set aside.
Directions for Rice Preparation:
3. Now in a preheated pot add oil, onion and cook for a minute. Now add black cardamom, bay leaves, and cumin seeds. Cook for a minute.
4. Then add NESTL MILKPAK Yogurt and then cook for another minute. Now add mutton stock, salt and bring it to a boil.
5. Add soaked rice and cook until 80% water has been absorbed. Now cover and cook until rice is fully done. Set aside.
Directions for Mutton Chops Preparation:
6. In a bowl add mutton chops, NESTL MILKPAK Yogurt, ginger garlic paste, lemon juice, tikka masala, papaya paste, red chili flakes. Marinate it for 1 hour.
7. Now place them on grill stand. Grill each side until fully done.
8. Now serve them with prepared rice, boneless mutton, sauted veggies and enjoy.
