Ingredients for Puri Paratha:
All-purpose flour 2 cups
Salt 1/2 tsp
Ghee 2 tbsp
Water as required

Ingredients for Wheat Flour Mixture:
All-purpose flour 1 cup
Water 1/2 cup

Ingredients for Mutton Kunna:
Mutton 1 ½ kg
Ginger garlic paste 2 tbsp
Onion (sliced) 3 cups
Ghee 1/2 cup
Salt to taste
Coriander powder 1 tbsp
Turmeric powder 1 ½ tsp
Red chili powder 2 tbsp
Cinnamon stick 2 inch (3)
Black cardamom 3
Cloves 8-9
Black peppercorns 1 tsp
Jaifal powder 1/2 tsp
Javitri powder 1/2 tsp
Garam masala 1 tsp
Black cumin 2 tsp
Red whole chilies 8-9
Water 4 cups
Flour Mixture
Black cumin (for sprinkle) as required


Directions for Puri Paratha:
1. In a bowl add flour, salt, ghee and mix well. Add water and knead a soft dough. Cover the dough with cloth and let it rest for 15-20 mins.
2. Now take the dough and cut it into equal parts and make small dough balls of each.
3. Roll them into flat circle shape with the help of rolling pin and spread ghee on it. Turn the roti into ball shape again and roll it down it into flat circle with the help of rolling pin.
4. Deep fry the prepared roti until light golden and crispy. Take off flame and set aside.
Directions for Mutton Kunna Preparation:
5. In a clay pot heat ghee and add onion. Cook until translucent. Add ginger garlic paste and cook for a minute. Now add mutton and cook for 5-10 minutes or until changes color.
6. Now add salt, coriander powder, turmeric powder, red chili powder and cook for about 5 minutes.
7. Now add cinnamon stick, black cardamom, cloves, black peppercorns and mix well. Add water and cover and cook on low flame for 40 minutes.
8. In a bowl add white flour and water and mix well. Your flour mixture is ready.
9. Add jaifal and javitri powder and mix well. Now add flour mixture and keep mixing until you reach the desired consistency.
10. Add garam masala, black cumin, red whole chilies on top and serve with Puri Paratha.

Cooking time: 1 hour
