Non-veg lovers, this appetizer is made with mutton mince and a mix of some masalas, then fried till perfection.

MUTTON KOLA URANDAI

Ingredients

300 grams mutton mice
½ inch cinnamon stick
4-5 cloves
1 tsp fennel seeds
4-5 green cardamoms
6-8 garlic cloves
1 inch ginger, roughly chopped
4 green chillies, stemmed
2 tbsps oil
1 medium onion, chopped
½ tsp turmeric powder
Salt to taste
3 tbsps chopped fresh coriander
8-10 curry leaves, roughly chopped
½ cup roasted chana dal powder
Oil for deep frying
Coconut chutney to serve

Method

1. Transfer cinnamon stick, cloves, fennel seeds and green cardamoms in a blender jar and grind coarsely.
2. Add garlic, ginger, green chillies, 2-3 tbsps water and grind to coarse paste.
3. Heat 2 tbsps oil in a nonstick pan. Add onion and sauté till translucent. Add prepared paste and sauté for a minute.
4. Add mutton mince and sauté on high heat for 5-6 minutes.
5. Add turmeric powder, salt and mix well.
6. Add coriander and mix well. Transfer in a plate and set aside to cool down. Transfer in a blender and grind to a fine paste.
7. Transfer in a bowl. Add curry leaves, roasted chana dal flour, salt and mix well.
8. Divide the mixture into equal portions and roll into balls.
9. Heat sufficient oil in a kadai and deep fry the prepared balls till golden brown and crisp.
10. Drain on absorbent paper and serve hot with coconut chutney.
