Non-veg lovers, this appetizer is made with mutton mince and a mix of some masalas, then fried till perfection. MUTTON KOLA URANDAIIngredients300 grams mutton mice½ inch cinnamon stick4-5 cloves1 tsp fennel seeds4-5 green cardamoms6-8 garlic cloves1 inch ginger, roughly chopped4 green chillies, stemmed2 tbsps oil1 medium onion, chopped½ tsp turmeric powderSalt to taste3 tbsps chopped fresh coriander8-10 curry leaves, roughly chopped½ cup roasted chana dal powderOil for deep fryingCoconut chutney to serveMethod1. Transfer cinnamon stick, cloves, fennel seeds and green cardamoms in a blender jar and grind coarsely.2. Add garlic, ginger, green chillies, 2-3 tbsps water and grind to coarse paste.3. Heat 2 tbsps oil in a nonstick pan. Add onion and sauté till translucent. Add prepared paste and sauté for a minute. 4. Add mutton mince and sauté on high heat for 5-6 minutes.5. Add turmeric powder, salt and mix well.6. Add coriander and mix well. Transfer in a plate and set aside to cool down. Transfer in a blender and grind to a fine paste.7. Transfer in a bowl. Add curry leaves, roasted chana dal flour, salt and mix well.8. Divide the mixture into equal portions and roll into balls.9. Heat sufficient oil in a kadai and deep fry the prepared balls till golden brown and crisp.10.
