In a bowl add mutton mince, roasted chickpea flour, poppy seeds, salt, red chili powder, coriander seeds crushed, egg, ginger garlic paste, red chili flakes, green coriander, green chilies, cumin powder and mix well.2. Now take mince mixture in your hands and make meat balls.3. In a pot heat oil and add prepared meatballs. Fry them until 80%. Your Kofta are ready. Set aside.Directions for Onion & Tomato Puree Preparation:4. In a pan heat oil and add onion, garlic, and ginger and cook until onion gets soft. Now add tomatoes and cook for 1-2 minutes. 5. Transfer the mixture into a blender and blend into smooth puree. Your puree is ready.Directions for Kofta Handi Preparation:6. In a pan heat oil and add onion puree and cook for 1-2 minutes.7. Now add red chili flakes, paprika powder, salt, cumin powder and cook for 2-3 minutes. Add yogurt and cook until oil separates.8. Add fried meat balls and water. Cover and cook for 10-15 minutes over low flame.9. Your Kofta are ready. Set aside.Directions for Whole Spice Sachet Preparation:10. Take a muslin cloth, add coriander seeds, cumin seeds, black cardamom, black peppercorns, cloves, and cinnamon stick, and make a sachet. Set aside.Directions for Mutton Stock Preparation:11. In a pot heat water and add mutton, salt, whole spice sachet and cover and boil until mutton gets tender. Take the boiled mutton out and reserve the stock for later use.Directions for White Mutton Pulao Preparation:12. In a pot heat oil and add cumin seeds, sizzle for a minute. Add onion and cook until translucent. Add tomatoes and cook until tomatoes get soft.13. Add boiled mutton and cook for 5 minutes.14. Add yogurt and cook 2-3 minutes.15. Now add mutton stock and bring it to boil. Add rice and cook until 80% water has been absorbed.16. Cover and steam the rice over low flame for 10 minutes.17. Your mutton pulao is ready.
