Do try and let me know how you like it.#MuttonKoftaCurry #KoftaRecipe #ChefHarpalSinghSokhiMutton Kofta Curry Serving - 4 pax Preparation time - 15 mins Cooking Time – 25 mins Ingredient Quantity For kofta Mutton keema 300 gm Ginger chopped 1 tbsp Green chilli chopped 3-4 nos Green Coriander leaves 1 tbsp Roasted channa dal pwd 2 tbsp Red chilli powder 1 tsp Black pepper crushed ½ tsp Coriander powder 1 tsp Garam masala 1 tsp Turmeric powder a pinch Salt to taste Egg 1 nos Mint leaves 1 tbsp Water as required Mutton excess water as required Cinnamon stick ½ inch Bayleaf 2 nos Cloves 3-4 nos Green cardamom 3-4 nos Salt to taste For curry Oil 2-3 tbsp Cumin seed 1 tsp Bayleaf 1 nos Onion chopped 2 nos Ginger garlic paste 1 tbsp Tomatoes chopped 3 nos Salt to taste Red chilli powder 2 tsp Coriander powder 1 tbsp Turmeric powder ½ tsp Garam masala ½ tsp Curd 3 tbsp Ginger julienne ½ inch Green chilli slit 3-4 nos Mint leaves few leaves + for garnish Method : 1. In a bowl , place a moist muslin cloth add mutton keema and strain the access water out of it , keep it aside . 2. Take another bowl add ginger , green chilli , green coriander leaves , roasted chana powder , red chilli powder , crushed black pepper , coriander powder , garam masala , turmeric , salt , egg , mint leaves , mutton keema and mix it thoroughly with the help of spoon until it bind together , keep it aside . 3. Heat a deep bottom pan , add water , cinnamon stick , bayleaf , green cardamom , cloves , excess mutton water and allow it to boil . 4. Now take small amount of water in a bowl , and grease your hand with it . 5. Start making equal size roundels and place it in a plate . 6. Meanwhile add salt to the mutton stock . 7. Once mutton stock comes to boil , using strainer remove the excess fat layer from top . 8. Now add the koftas into the boiling stock and Shake the pan slightly so that kofta get cooked from all side . 9. Allow kofta to get cooked in the stock water for around 8-10 mins, once done keep it aside . 10. Heat another deep bottom pan , add oil , cumin seed , bayleaf allow it to splutter . 11. Now add onions and allow it to cook on medium flame until its golden brown . 12. Now add ginger garlic paste,sauté it well for 30 seconds . 13. Now add tomatoes and allow it to sauté for 2 mins . 14. Add salt , red chilli powder , coriander powder ,turmeric powder ,garam masala saute it for 3-4 mins on medium flame . 15. Now add whisked curd and mix it well on slow flame for 1 min . 16. Now allow the mixture to get cool . 17. In a blender add the the prepared mixture , remove bayleaf , add mutton stock as required and make a fine paste . 18. Heat a pan , strain the paste using strainer add remaining stock water into it . 19. Add the koftas into the curry and allow it to cook on low flame for 3-4 mins . 20. Now add ginger julienne , slit of green chilli , mint leaves and allow it to cook and bring it to boil . 21. Transfer it to serving bowl , garnish with mint sprig . 22. Serve hot .
