Mutton cutlet is rich in nutrients and the spices added to it enhances and boosts the flavor of this recipe. Following are the ingredients to make tasty and yummy mutton cutlet:150 grams minced mutton4 potatoes boiled and smashed well1 egg1 onion finely chopped 1 tomato finely chopped½ tbl spoon fennel powderA small piece of cinnamon2 nos cardamom2 nos cloves1 tbl spoon red chilli powder¼ tbl spoon turmeric powder5 to 6 nos cashews1 tbl spoon ginger garlic paste1 cup bread crumbsFew curry leavesFew coriander leavesOil as neededSalt as neededNow let’s start preparing the mutton cutlet:To prepare the stuffing:Step 1: Heat a pan or pressure cooker. Once it is hot add oilStep 2: Now add the spices (cardamom, cloves and cinnamon) along with fennel powder.Step 3: Now add ginger garlic paste followed by cashewnuts.Step 4: Add onions and saute well.Step 5: Add tomatoes and saute till they turn mushy.Step 6: Now add coriander and curry leaves and saute well until the raw smell goes away.Step 7: Now its time to add the minced mutton. Mix well thoroughly. Step 8: Add red chillie powder followed by turmeric powder.Step 9: Add salt as needed.Step 10: Add 2 glasses of water to it and let it pressure cook. After first whistle let it pressure cook for the next 5 minutes.Step 11: After 5 minutes from the first whistle open the lid and ensure that it is semi dry. If water is left behind let it cook until it becomes semi dry and water free.Step 12: Leave it aside for sometime and let it cool down.To prepare the cutlet:Step 1: Smash the potatoes and add red chilli powder to it along with salt as needed.Step 2: Take another bowl and break open 2 eggs and beat them well.Step 3: Take a lemon sized smashed potatoes and shapen them with your palms.Step 4: Flatten them with your palm and make a dent at the middle with your thumb and place the stuffing at the centre and close the smashed potatoes entirely covering the stuffing. Step 5: Dip the cutlets into the beaten egg.Step 6: Followed by dipping into the egg, put them onto the bread crumbs. Flip it over such that the bread crumbs are equally distributed on all sides of the cutlet.For Frying:Step 1: Heat a pan with oil.Step 2: Put the prepared cutlets one by one into oil and heat them on medium flame.
