Chennai Bai Veetu Biryani so popularly called is mutton biryani that is made in weddings in Tamil-Nadu
Recipe for Chennai Bai Veetu Biryani
Take a Biryani pot.
Add 150ml oil.
Add whole garam
masalas.
Add 1/2 kg sliced onion.
Add salt.
Cook the onions Golden Brown colour.
Add 2 spoon Ginger Garlic paste.
Add 5 no sliced Green Chilly.
Add 2 spoon Chilly Powder.
Add 2 spoon Coriander Powder.
Add 2 spoon Biryani masala powder.
Add 1/2 spoon garam masala powder.
Add 1kg of Mutton pieces.
Mix it well.
Add water.
Cook this Mutton Nice.
Take some gravy's.
Add 100ml curd.
Add 1/2 bunch mint.
Add some Coriander.
Add 200ml milk.
Add 3 cut Tomatoes.

Rice cooking Process

First boiling water (more water).
Add some oil.
Add salt (like Sea water taste).
Add saffron water.(orenges colour).
Add 1kg of Soaked Basmati Rice.
Cook it for 80%.
Layering Biryani Rice.
Add 1no Lemon juice.
Taken a some of Gravy's
Put it on top.
Add some ghee.
Put the led on.
Cook it for 20min slow flame.
Mix it light.

Ingredients
1/2 loaf bread
1 cup cahsew,almonds
3 number cardamom pdr
1 to fry ghee or fresh oil
4 drops lime
500 ml milk
pista,dated,raisins
1 pinch safron color
300 grams sugar
300 ml water

Directions
• cut bread into halves of triangle and let them dry over night , fry in ghee till golden brown

• make sugar syrup flavoured with cardamom and few drops of lime juice and safron color

• make rabdi with milk (slowly boil milk till it is reduced to 1/4 tho og original

• soak bread in sugar syrup for few seconds and remove . put all nuts and dryfruits over the sweetened bread and pour over rabdi

• serve warm
