Mushroom Pot Rice | Sanjeev Kapoor Khazana

Easy peasy mushroom rice made in one pot. Really! Even the rice gets cooked right in! It's so creamy and packed with loads of flavour!

MUSHROOM POT RICE

Ingredients

8-10 button mushrooms, halved
¼ cup shitake mushrooms, halved
¼ cup mushrooms
2 tablespoons oil
1 tablespoon garlic
1 spring onion bulb, roughly chopped
1 inch ginger cut in strips + to sprinkle
1 tablespoon oyster sauce
½ tablespoon soya sauce
Salt to taste
1 teaspoon white pepper powder
1 tablespoon corn starch slurry
1 stalk spring onion greens, chopped + for garnish
1 tablespoon vinegar


Method

1. Heat oil in a non-stick pan, add garlic, spring onion, and ginger. Sauté till fragrant.
2. Add in all the mushrooms and stir well.
3. Add oyster sauce, soya sauce, stir well and add some water. Stir and mix well.
4. Add salt and pepper powder, stir and mix well.
5. Add some more water and mix. Add cornstarch slurry and mix well, add water and stir.
6. Add spring onions, mix well. Add vinegar and ginger, toss.
7. Serve on top of warm boiled rice, garnish with spring onions.
