Ingredients:
1 tbsp oil
1 tsp mustard seeds
½ tsp methi seeds
Small stick cinnamon
2 cloves
Curry leaves
1/2 cup whole/ halved shallots
1 tbsp Chings Schezwan fried rice masala
1.5 tsp freshly cracked pepper
2 cups button mushrooms, halved
Salt as required
Water as required
1/3 to ½ cup coconut milk
Coriander leaves and lime for garnish

Method:
•In a pan, heat oil. Crackle mustard seeds. Add methi seeds, cinnamon, cloves, curry leaves and shallots. Saute on a medium flame for 5 minutes.
•Add Schezwan fried rice masala, black pepper and mushroom. Toss well.
•Add water as required and cover and cook for 5 minutes.
•Once cooked, check for salt and thin down with coconut milk depending on consistency of gravy required.
•Garnish with coriander leaves and serve.
