Mushroom Methi Palak
Delicious Mushroom Methi Palak is a perfect recipe for Lunch, This is best enjoyed with parathas, naan, rotis .

Ingredient Quantity
Mushroom cut into 1 by 4 12-15 no.
Spinach Puree 1 Cup
Fenugreek leaves (Methi) ½ kg.
Oil 2 tbsp
Cumin seeds 1 tsp
Coriander seeds 1 tbsp
Dry red chillies 3-4 no.
Onion chopped 2 no.
Ginger-garlic paste 1 tbsp
Tomato Cut into small cube 3-4 no.
Red chilli powder 1½ tsp
Coriander powder 1½ tbsp
Garam Masala powder 1tsp
Turmeric powder ½ tsp
Amchur powder ½ tsp
Salt to taste
Coriander chopped 1 tbsp
Method:
1. Heat oil in a non stick pan. Add cumin seeds, coriander seeds and red chillies and sauté till seeds crackle.
2. Add onion, mix well and sauté till onions gets brown.
3. Add ginger-garlic paste and sauté for 2 min.
4. Add tomatoes and salt, mix well and sauté for 2-3 min. or till tomatoes are pulpy.
5. Add red chilli powder, coriander powder, garam masala powder, turmeric powder and amchur powder, mix well and sauté for 5-6 min.
6. Add fenugreek leaves, mix well and sauté for 3-4 min.
7. Add mushroom, mix well and sauté for 5-6 min.
8. Add spinach puree, mix well and sauté for 3-4 min.
9. Add chopped coriander and mix well.
10. Remove in serving bowl and serve hot.
