Palak Gosht

Ingredients for Blanched Palak:
Water 5-6 cups
Palak (Spinach) 1 kg
Methi (Fenugreek) 1 cup
Ice water as required


Ingredients for Palak Puree:
Oil 3 tbsp
Palak puree
Milk 1 cup

Ingredients for Palak Gosht:
Oil 1/4 cup
Black pepper whole 15-20
Black cardamoms 2
Cloves 3-4
Onion (sliced) 1 cup
Mutton 1 kg
Tomato (sliced) 1 cup
Ginger garlic paste 1 tbsp
Red chili powder 2 tbsp
Red chili flakes 1 tbsp
Coriander powder 1 tbsp
Cumin powder 1 tbsp
Salt 1 tsp
Water 2 cups
Yogurt 1 cup
Blanched palak puree
Garam masala powder 1 tbsp

Ingredients for Rice:
Oil 3 tbsp
Cumin seeds 1 tbsp
Black pepper whole 15-20
Cinnamon sticks 1-2
Water 5 cups
Salt 1 tbsp
Soaked rice 3 cups
Yellow food color 1 tsp

Directions for Blanched Palak Preparation:
1. In a pot heat water and add palak and methi. Boil for 5-6 minutes and transfer it into ice water for 2 seconds.
2. Add blanched palak in blender and blend it well to make a smooth puree. Set aside.
Directions for Palak Puree Preparation:
3. In a pot heat oil and palak puree. Cook for 5 mins. Now add milk and cook for another 5 mins or until thickens. Set aside.
Directions for Palak Gosht Preparation:
4. In a pan heat oil add black peppercorns, cloves and black cardamom. Cook for a minute.
5. Add onion cook until translucent now.
6. Now add mutton and cook until meat changes color. Add tomatoes and ginger garlic paste cook until tomato gets soft.
7. Now add red chili powder, red chili flakes, coriander powder, cumin powder, salt cook for 2-3 minutes.
8. Add water cover and cook until meat is fully done.
9. Now add yogurt and cook until oil separates. Add prepared palak puree cook for 10-15 minuts and add garam masala at last. Give it a good mix. Your Palak Gosht is ready. Set aside.
Directions for Rice Preparation:
10. In a pot heat oil and add cumin seeds, black pepper, cinnamon sticks and cook for a minute.
11. Add water and salt and when it starts boiling, add soaked rice.
12. Boil until 80% water dries out. Add food color and cover and steam over low flame for 10-15 minutes or until rice is fully done.
13. Your Rice is ready. Serve it with Palak Gosht and enjoy.
