A healthy chaat which is also loaded with deliciousness to make and enjoy with your loved ones.MOTH CHAATIngredients2 cups moth bean (matki) sprouts2 tbsps oil1½ tsps cumin seeds1-2 green chillies, chopped2 medium onions, finely chopped½ tbsp crushed ginger½ tbsp crushed garlic1½ cups fresh tomato pureeSalt to taste2 tsps red chilli powder + for sprinkling1 tsp cumin powder½ tsp dried mango powder (amchur)½ tsp garam masala powder2 tbsps chopped fresh coriander leaves + for garnish½ lemon20-24 crisp papdisSweetened yogurt for drizzlingDate and tamarind chutney for drizzlingGreen chutney for drizzlingChaat masala for sprinklingPotato salli for garnishMethod1. Heat oil in a non-stick pan, add cumin seeds and let them change colour. Add onions and sauté till translucent. 2. Add ginger and mix well. Add garlic and sauté for 1-2 minutes.3. Add tomato puree and mix well. Cover and cook for 3-4 minutes.4. Add salt, mix and cook for a minute. Add red chilli powder, cumin powder, dried mango powder, and garam masala powder and mix well.5. Add matki sprouts and mix well. Add 1½ cups water, mix and cook for 6-8 minutes.6. Add coriander leaves and mix well. Squeeze the juice of lemon and mix and switch the heat off.7. To make the chaat, crush a few papdis in a serving plate. Add a generous portion of the prepared mixture. Drizzle sweetened yogurt, date and tamarind and green chutney. Sprinkle red chilli powder and chaat masala.
