A healthy chaat which is also loaded with deliciousness to make and enjoy with your loved ones.

MOTH CHAAT

Ingredients

2 cups moth bean (matki) sprouts
2 tbsps oil
1½ tsps cumin seeds
1-2 green chillies, chopped
2 medium onions, finely chopped
½ tbsp crushed ginger
½ tbsp crushed garlic
1½ cups fresh tomato puree
Salt to taste
2 tsps red chilli powder + for sprinkling
1 tsp cumin powder
½ tsp dried mango powder (amchur)
½ tsp garam masala powder
2 tbsps chopped fresh coriander leaves + for garnish
½ lemon
20-24 crisp papdis
Sweetened yogurt for drizzling
Date and tamarind chutney for drizzling
Green chutney for drizzling
Chaat masala for sprinkling
Potato salli for garnish

Method

1. Heat oil in a non-stick pan, add cumin seeds and let them change colour. Add onions and sauté till translucent.
2. Add ginger and mix well. Add garlic and sauté for 1-2 minutes.
3. Add tomato puree and mix well. Cover and cook for 3-4 minutes.
4. Add salt, mix and cook for a minute. Add red chilli powder, cumin powder, dried mango powder, and garam masala powder and mix well.
5. Add matki sprouts and mix well. Add 1½ cups water, mix and cook for 6-8 minutes.
6. Add coriander leaves and mix well. Squeeze the juice of lemon and mix and switch the heat off.
7. To make the chaat, crush a few papdis in a serving plate. Add a generous portion of the prepared mixture. Drizzle sweetened yogurt, date and tamarind and green chutney. Sprinkle red chilli powder and chaat masala. Garnish with potato salli and coriander leaves.
