Moong dal with bottle gourd (Lauki) is a unique wholesome recipe done in various styles in India, however this is something which is perfect Maharastrian style, spicy, hot and tasty...

Ingredients:
Lauki (bottle gourd) cut in cubes - 1/2 nos
Moong dal soaked - 3 tbsp
Onion chopped - 1 nos
Tomato chopped - 1 nos
Coriander chopped - 2 tbsp
Green chili chopped - 1 nos
Ginger garlic paste - 1 1/2 tsp
Curry leaves - 8-10
Turmeric powder - 1 tsp
Coriander powder - 1 tbsp
Red chili powder - 1-2 tsp
Mustard seeds - 1 tsp
Hing - 1/2 tsp
water - as required
Asafoetida (Hing) - 1 tsp
Salt - to taste
Oil - 1 tbsp

Method:
1) Heat oil in a pan add mustard seeds, curry leaves, green chilli, hing onion, ginger garlic paste, turmeric, coriander and red chilli powder, tomato, salt and saute for few minutes
2) Now add lauki and soaked moong dal,chopped coriander, let it cook for for 5 minutes
3) Now add water, cover the pan and cook for about 15- 20 minutes, remove on a plate and serve hot ..with roti or paratha
