MONKEY BREAD

Ingredients

Caramel sauce for drizzling
Brioche
200 grams refined flour (maida) + for dusting
¾ teaspoon salt
2 tablespoons castor sugar
1 teaspoon activated yeast
70 ml milk
2 eggs
70 grams unsalted butter
Cinnamon vanilla streusel
1 teaspoon cinnamon powder
½ teaspoon vanilla essence
50 grams refined flour (maida)
2 tablespoons butter, chilled
2 tablespoons brown sugar
1 teaspoon clove powder
½ teaspoon vanilla essence

Method

1. To make brioche, take flour in a bowl. Add salt, castor sugar and make a well in the centre. Add activated yeast and beat.
2. Add milk and keep beating. Add eggs, one by one, and beat again. Add butter and beat till well incorporated into a dough. Set aside in a warm place for 1-2 hours.
3. To make cinnamon vanilla streusel, take flour in a bowl. Add butter, brown sugar and cinnamon powder, clove powder, and vanilla essence and mix well till the mixture resembles breadcrumbs. Refrigerate to chill.
4. Knock back the dough to release excess air and refrigerate for 4-5 hours.
5. Preheat oven to 200° C.
6.Dust the worktop with some flour, place the dough on it and roll out into ½ inch thick sheet.
7. Cut into small uneven pieces and place some of them in a silicon bundt pan. Sprinkle some of the prepared streusel on top and repeat the process until all the pieces and streusel is used up.
8. Drizzle caramel sauce on top, put it in the preheated oven and bake for 35-40 minutes. Remove from oven, cool and demould.
