Molaga Podi | Masala Box | Sanjeev Kapoor Khazana

The famous gun powder recipe, Molaga Podi is widely used in South Indian, with every dish possible from idlis to dosas to vadas.

MOLAGA PODI

Ingredients

½ cup white sesame seeds
4 tablespoons sesame oil
¼ cup split Bengal gram (chana dal)
¼ cup split skinless black gram (dhuli urad dal)
2 tablespoons mustard seeds
3 cups dried red chillies
¼ cup roasted split Bengal gram
¾ teaspoon asafoetida (hing)
1/8 cup salt

Method

1. Dry-roast sesame seeds in a non-stick pan till they start popping. Transfer on a plate and cool.
2. Heat 2 tablespoons oil in the same non-stick pan. Add split Bengal gram, split black gram and mustard seeds and roast till mixture turns golden brown. Transfer on the same plate and cool.
3. Heat remaining oil in the same non-stick pan. Add dried red chillies and sauté till light golden brown. Transfer on the same plate and cool.
4. Coarsely grind together roasted split Bengal gram, asafoetida, salt and roasted ingredients.
5. Store in air-tight container and use as required.
