Molaga Podi French Fries | 5 Ways To Enchance French Fries | Sanjeev Kapoor Khazana

A dry spiced powder made from mixed dals and sesame seeds.. These tasty french fries with a sprinkle of the molaga podi masala is worth a try.

MOLAGA PODI FRENCH FRIES

Ingredients

3 cups French fries, frozen
Oil for deep-frying
Molaga podi (gun powder) mix
½ cup white sesame seeds (safed til)
¼ cup split black gram (urad dal)
¼ cup roasted Bengal gram (daalia)
¼ cup split Bengal gram (chana dal)
2 tablespoons mustard seeds
2 cups dried red chillies
¾ teaspoon asafoetida (hing)
1 teaspoon jaggery powder
Salt to taste

Method

1. Dry roast sesame seeds till they pop. Transfer in a bowl.
2. In the same pan, dry roast black gram, roasted Bengal gram and Bengal gram till fragrant. Transfer in the same bowl.
3. In the same pan, dry roast mustard seeds till they splutter. Transfer in the same bowl.
4. In the same pan, dry roast red chillies for 2-3 minutes. Remove from heat and cool.
5. Add asafoetida and jaggery powder in the bowl and mix.
6. Grind the mixture alongwith roasted chillies and salt into a coarse powder. Transfer in a bowl and adjust the seasoning. Use as required or store in an airtight container.
7. Heat sufficient oil in a kadai. Deep-fry French fries till crisp. Drain on absorbent paper.
8. Transfer the fries in a zip lock bag and add sufficient amount of molaga podi in it. Seal and shake well.
9. Serve immediately.
