WINTER MIXED VEG SOUP - A perfect soup makes the coldest of winters bearable! On much much popular demand, here's my recipe for a quick n easy Veg Soup

WINTER MIXED VEG SOUP
Preparation time 5-10 minutes
Cooking time 20-25 minutes
Serve 2-4

Ingredients
For Vegetable Winter Soup
2 tbsp Butter, cubed,
2 tsp Oil,
1 no. Bay leaf,
1 inch Ginger (peeled & finely chopped)
2 medium Onion, finely chopped,
1 tbsp Tender Coriander stem, finely chopped,
2 large winter Carrot (peeled & chopped)
small Cauliflower, roughly chopped,
small Cabbage, chopped,
2 tbsp Butter, cubed,
6-7 no. Button Mushroom, roughly sliced,
1 liter Water,
cup fresh Green peas,
Fresh Flat Noodle,
1 inch Ginger (peeled & finely chopped)
2 tbsp Coriander leaves, finely chopped,
1 tsp Black peppercorns, crushed,
3-4 tbsp Cornstarch slurry,

For Chilli Oil
1 cup Oil,
cup Sesame oil,
4-5 no. Garlic cloves, chopped,
2-4 no. Cloves,
1 no. Star anise,
cup Chilli flakes,
1 tbsp White Sesame seeds,
1 tsp Degi red chili powder,

For Fresh Rolled Dough
1 cup Whole Wheat flour,
Salt to taste,
Water as required,
1 tsp Oil (after kneading)

For Assembling
1 cup fresh Spinach, roughly chopped,
Prepared Soup,
Chili oil,
Lemon wedge,
Coriander sprig,

Process
For Vegetable Winter Soup
In a sauce pot, add butter, oil, bay leaf, ginger, onion and saute until golden in color.
Add tender coriander stems, winter carrot, cauliflower, cabbage, butter, button mushroom and saute it for a minute.
Add water, cover it with the lid and boil it for 20-30 minutes on medium flames.
Add green peas, fresh flat noodles, ginger, coriander leaves, black peppercorns, cornstarch slurry and simmer it for 5-6 minutes until cooked well.
Keep it aside for further use.

For Chilli Oil
In a small saucepan, add oil, sesame oil, once it's slightly hot, add garlic, cloves, star anise, chili flakes, white sesame seeds, degi red chili powder and mix it well.
Cook it in low flames for 15-20 minutes until aromatic .
Keep it aside for further use.

For Fresh Rolled Dough
In a bowl, add whole wheat flour, salt to taste, water as required and knead a semi soft dough.
Apply oil and cover it with wet cloth.
Keep it aside to rest for 10-15 minutes.
Take lemon size dough and flatten with the help of a rolling pin.
Trim the edges, cut it into desired shape and keep it aside for further use.

For Assembling
In a serving bowl, add spinach, pour ladleful prepared soup, drizzle some prepared chili oil, garnish it with lemon wedge and coriander sprig.
Serve hot.
