Mixed sprouts ground, mixed with fresh herbs, shaped into falafel and deep friedMIXED SPROUTS FALAFELIngredients250 gms mixed sprouts (chana, moong, moth)Oil to deep fry1 spring onion with greensA few sprigs fresh curly parsleyA few sprigs fresh coriander leaves1 tbsp chopped garlic½ tsp cumin powderA pinch of black pepper powderA pinch of red chilli powderSalt to taste3 tbsps dried breadcrumbs½ tsp baking sodaMethod1. Heat sufficient oil in a kadai.2. Grind sprouts with roughly chopped spring onions and greens, a few sprigs of curly parsley and coriander leaves. Add garlic, cumin powder, pepper powder, red chilli powder and salt and grind again to a slightly coarse paste. Transfer this paste into a bowl.3. Add breadcrumbs and baking soda and mix well.4. Take some mixture in your hand, press and shape into oval shaped fritters. Slide them into hot oil and deep-fry till golden and crisp. Drain on absorbent paper.5.
