MINI MEATLOAF MUFFINS
INGREDIENTS
1 package (about 20 oz) EXTRA lean ground turkey breast
1/2 cup egg whites
1/2 cup oats
1 cup chopped spinach
1/2 cup onion
1/4 cup red bell pepper
1/4 cup celery
1 tsp minced garlic
1/2 tsp garlic powder
Salt and pep to taste
1 tsp yellow mustard
1 tsp dijon mustard

PROCEDURE
1. Mix all ingredients in a bowl, and divide into mini muffin tin sprayed with olive oil spray (I use a 1 Tbsp cookie scooper to distribute).
2.Bake at 350F for about 15-20 minutes.
3. Enjoy!

This recipe yields 24 servings.
NUTRITION per serving (1 mini muffin):
24 calories
1g carbs
0.3g fat
4g protein

**You can also make these in a normal sized muffin tin and get up to 10 GRAMS OF PROTEIN per muffin!

MEATLOAF DRESSING
INGREDIENTS
1/4 cup ketchup
1 Tsbp honey
1 tsp worcestershire sauce

PROCEDURE
Mix all ingredients together.
Devour with mini muffins!
