Mini Frittata | Sanjeev Kapoor Khazana

Eggs mixture poured in muffin moulds topped with spinach, bell pepper, broccoli, sausages, bacon and cheese - baked till perfection.

MINI FRITTATA

Ingredients

5-6 eggs
Salt to taste
Crushed black peppercorns to taste
¼ small bunch spinach, shredded
½ medium red bell pepper, finely chopped
6-8 broccoli florets, chopped
1 medium onion, finely chopped
2 chicken sausages, sliced
2-3 bacon strips, finely chopped
Grated processed cheese as required

Method

1. Preheat oven at 180º C.
2. Break eggs in a bowl. Add salt and crushed peppercorns and whisk well.
3. Pour the egg mixture into a silicon muffin mould tray, filling ¼. Put some spinach, some bell pepper, some broccoli, some onion, some sausage slices, some bacon and some cheese on top.
4. Put the muffin mould tray on a baking tray. Place the baking tray in preheated oven and bake for 8-10 minutes. Remove from oven and demould.
5. Serve hot with tomato ketchup.
